Recipe of the week
Organic mince filled courgettes are family favourite. Simple and budget-friendly too!What you need:
3-4 courgettes
400-500g mince beef
1 onion
2 cloves of garlic
1 can of chopped tomatoes
cheese
rice
olive oil
salt, pepper, marjoram
How do make it:
- Pre-heat oven to 180C.
- Cut courgettes lengthwise in half and carve out the insides (save for courgette-soup).
- Empty can of chopped tomatoes into a baking dish with a pinch of salt and pepper.
- Float the courgettes “boats” on the tomato sauce, splashing them with olive oil and sprinkling with marjoram.
- Put in oven for 20 mins, or until soft.
- Fry onion in a pan with olive oil and add garlic when onion is golden brown.
- Add mince beef to pan with salt and pepper.
- Fill the courgettes with the fried mince, top with cheese and put back in oven for another 5 mins to melt the cheese.
- Serve the filled courgette boats with rice and the tomato sauce.
